Beef Joint Sunday Pre-Stage
Ingredients
- 1 X Beef Joint
- 20g X Thyme
- 10g X Maldon Sea Salt
- 10g X Cracked Black Pepper
- 1 X Whole Garlic (Crushed)
- 2 X White Onion (Chopped)
- 150g X Carrots (Chopped)
Pre-Stage

- 6 10g X Cracked Black Pepper
- 7 1 X Whole Garlic (Crushed)
- 8 2 X White Onion (Chopped)
- 9 150g X Carrots (Chopped)
Method
- 1 1. Preheat the oven to 200c
- 2 2. Peel and crush the garlic
- 3 3. Remove the beef from the packaging and allow the meat to breathe
- 4 and return to a red colour
- 5 4. Place onion, carrots, and garlic in an oven suitable roasting tray. Top
- 6 with the beef
- 7 5. Season the beef with sea salt and cracked black pepper and thyme
- 8 6. Add some water to the base of the tray, enough to cover a small amount
- 9 of the beef
- 10 7. Roast in the oven until core temperature of 53°c is achieved
- 11 (approximately 1 hour and 30mins cooking time)
- 12 8. Allow the beef to rest
- 13 9. Serve to order as per individual spec sheet
