Beef Joint Sunday Pre-Stage

Ingredients

  • 1 X Beef Joint
  • 20g X Thyme
  • 10g X Maldon Sea Salt
  • 10g X Cracked Black Pepper
  • 1 X Whole Garlic (Crushed)
  • 2 X White Onion (Chopped)
  • 150g X Carrots (Chopped)

Pre-Stage

  5. 5 10g X Maldon Sea Salt
  6. 6 10g X Cracked Black Pepper
  7. 7 1 X Whole Garlic (Crushed)
  8. 8 2 X White Onion (Chopped)
  9. 9 150g X Carrots (Chopped)

Method

  1. 1 1. Preheat the oven to 200c
  2. 2 2. Peel and crush the garlic
  3. 3 3. Remove the beef from the packaging and allow the meat to breathe
  4. 4 and return to a red colour
  5. 5 4. Place onion, carrots, and garlic in an oven suitable roasting tray. Top
  6. 6 with the beef
  7. 7 5. Season the beef with sea salt and cracked black pepper and thyme
  8. 8 6. Add some water to the base of the tray, enough to cover a small amount
  9. 9 of the beef
  10. 10 7. Roast in the oven until core temperature of 53°c is achieved
  11. 11 (approximately 1 hour and 30mins cooking time)
  12. 12 8. Allow the beef to rest
  13. 13 9. Serve to order as per individual spec sheet
