Ingredients

  • 1 X Dough Puck
  • 10g x Semolina
  • 70g X Fresh Pizza Sauce
  • 60g X Diced Mozzarella
  • ½ X Mozzarella Ball
  • 50g X Chicken Breast
  • 1g x Harissa Spice
  • 8g x Honey
  • 2g X Chilli Flakes
  • 20g x Nduja Sausage
  • 1g X Maldon Salt
  • 5ml X Olive Oil
  • 5g X Basil

Pre-Stage

  1. 1 1. Make the fresh pizza sauce as per sub recipe
  2. 2 2. Marinate the chicken in the harissa spice. Pre-cook the chicken
  3. 3 3. Mix the chilli flakes and honey to make hot honey drizzle NB - Please ensure
  4. 4 that this prepared on the day of service and thrown out at the end of the
  5. 5 day

Method

  1. 1 1. Roll/stretch the dough into a pizza shape using the semolina
  2. 2 2. Evenly spread the tomato sauce across the pizza base
  3. 3 3. Sprinkle the mozzarella over the pizza
  4. 4 4. Evenly lay the chicken & nduja across the pizza
  5. 5 5. Place in the oven and cook until mozzarella melts and toppings colour
  6. 6 6. Tear the ½ ball of mozzarella evenly across the pizza
  7. 7 7. Drizzle oil, basil, and a pinch of salt to season
  8. 8 8. Brush the edges with the hot honey
  9. 9 9. Serve as shown
