Wholetail Scampi
Ingredients
- 10 X Scampi Pieces
- 200g X Skin-on Chips
- 50g X Garden Peas Or
- 100g X Mushy Peas
- 1/6 X Lemon
- 35g X Tartare Sauce
- 5g X Capers
- 1g X Sea Salt
Pre-Stage
- 1 1. Mix the capers into the tartare sauce
- 2 2. Cut the lemon
Method
- 1 1. Deep fry the scampi and chips, allow the excess oil to drain
- 2 2. Heat the garden peas in a pan of lightly salted boiling water or heat the
- 3 mushy peas in a microwave
- 4 3. Decant the tartare sauce into a ramekin
- 5 4. Season the chips with sea salt
- 6 5. Garnish with lemon wedge
- 7 6. Serve as shown
