Wholetail Scampi

Ingredients

  • 10 X Scampi Pieces
  • 200g X Skin-on Chips
  • 50g X Garden Peas Or
  • 100g X Mushy Peas
  • 1/6 X Lemon
  • 35g X Tartare Sauce
  • 5g X Capers
  • 1g X Sea Salt

Pre-Stage

  1. 1 1. Mix the capers into the tartare sauce
  2. 2 2. Cut the lemon

Method

  1. 1 1. Deep fry the scampi and chips, allow the excess oil to drain
  2. 2 2. Heat the garden peas in a pan of lightly salted boiling water or heat the
  3. 3 mushy peas in a microwave
  4. 4 3. Decant the tartare sauce into a ramekin
  5. 5 4. Season the chips with sea salt
  6. 6 5. Garnish with lemon wedge
  7. 7 6. Serve as shown
