8oz Sirloin

Ingredients

  • 1 X Sirloin Steak
  • 200g X Chips
  • 10ml X Garlic Whirl
  • 2g X Sea Salt
  • 1g X Cracked Black Pepper
  • 5ml X Rapeseed Oil
  • 1 X Large Flat Mushroom
  • 10g X Watercress
  • 1 X Tomato
  • 1 X Chosen Sauce or Butter -
  • 1 X Peppercorn Pouch, 50ml X Beef
  • Dripping or 60g X Chimichurri Butter

Pre-Stage

  1. 1 1. Set up seasoning tray for the steak, oil, salt & pepper
  2. 2 2. Wash watercress and store in ice water

Method

  1. 1 1. Season the steak and cook to guests’ request, allow to rest
  2. 2 2. Deep fry the chips, drain excess oil, season with sea salt
  3. 3 3. Cut a ‘X’ on the tomato, wash the mushroom, brush with garlic whirl, bake
  4. 4 4. If ordered with sauce, reheat in a pan or microwave
  5. 5 5. If ordered with butter, top steak when resting to allow butter to melt
  6. 6 6. Serve as shown
