Truffle

Ingredients

  • 1 x Dough Puck
  • 10g x Semolina
  • 60ml X Bechamel Sauce
  • 60g X Diced Mozzarella
  • 10g X Hard Cheese
  • 100g X Mushroom Mix
  • 5g X Roquette
  • 10ml X Truffle Oil
  • 1g X Maldon Salt
  • 11g x Garlic Butter
  • 2g x Rosemary

Pre-Stage

  1. 1 1. Make the mushroom mix & garlic butter as per sub recipe

Method

  1. 1 1. Roll / stretch the dough puck into a pizza shape using the semolina
  2. 2 2. Evenly spread the bechamel sauce across the pizza base
  3. 3 3. Sprinkle the mozzarella over the pizza
  4. 4 4. Place the mushrooms across the pizza
  5. 5 5. Place in the oven and cook until mozzarella melts and toppings colour
  6. 6 6. Evenly drizzle truffle oil
  7. 7 7. Finish with parmesan, roquette, rosemary and a pinch of salt
  8. 8 8. Melt the garlic butter and brush around the edges of the pizza
  9. 9 9. Serve as shown
