Pork Belly Bites
Ingredients
- 110g X Rolled Pork Belly
- 40g X Bramley Apple Sauce
- 10g X Cornflour
- 5g X Spring Onion
- 5ml X Shallot Coulis
- 2g X Red Chillies
- 1g X Crushed Chillies
- 1g X Sesame Seeds
Pre-Stage
- 1 1. Thinly diagonally slice the red chillies and spring onion
- 2 2. Toast the sesame seeds in a dry frying pan
- 3 3. Portion the pork belly into bite sized pieces
Method
- 1 1. Coat in cornflour and deep fry until crispy, drain excess oil
- 2 2. Drizzle with shallot coulis
- 3 3. Garnish with chopped chillies, spring onion and toasted sesame seeds
- 4 4. Place the apple sauce in a ramekin and sprinkle with chilli flakes
- 5 5. Serve as shown
