Calamari
Ingredients
- 150g X Blanched Squid Tubes
- (Defrosted Weight)
- 40ml X Heinz Professional
- Mayonnaise
- 2g X Salt & Chilli Seasoning
- 2g X Spring Onion
- 25g X Roosters Chick Dip
- 1/16 X Lemon
- 2g X Red Chillies
Pre-Stage
- 1 1. Defrost the squid tubs
- 2 2. Mix lemon and mayonnaise to make lemon mayonnaise
- 3 3. Slice on angle the spring onion and red chillies
- 4 4. Make chick dip as per manufacturer's guidance
Method
- 1 1. Dry & slice the squid and coat into the chick dip and deep fry
- 2 2. Drain and toss with salt and chilli seasoning
- 3 3. Place the lemon mayonnaise in ramekin
- 4 4. Garnish with spring onion & red chillies
- 5 5. Serve as shown
