Flat Iron Chicken
Ingredients
- 1 X Chicken Breast
- 5g x Chimichurri Sauce
- 200g X Chips
- 15g X Salted Dairy Butter
- 5g X Garlic Whirl
- 35g X Mayonnaise
- 5g X Watercress
- 1g X Sea Salt
- 1g X Cracked Black Pepper
- Bulk Recipe – Chimichurri Butter 10ptns
- 250g X Butter
- 50g X Chimichurri Sauce
Pre-Stage
- 1 1. Defrost the chicken breast
- 2 2. Make the chimichurri butter. Soften the butter, mix in the chimichurri and roll into a
- 3 log, store in the freezer
- 4 3. Mix the garlic whirl and mayo to make garlic mayo
- 5 4. Wash & store the watercress in an ice bath
Method
- 1 1. Butterfly the chicken breast, flatten further with your hand
- 2 2. Coat the chicken in 5g of Chimichurri, pan fry in butter, finish in the oven
- 3 3. Deep fry the chips, drain excess oil, season with sea salt
- 4 4. Place the garlic mayo into a ramekin
- 5 5. Serve as shown
