Ham Hock Egg & Chips
Ingredients
- 1 X Ham Hock
- 2 X Egg
- 200g X Chips
- 10g X Honey
- 5g X Watercress
- 1 X Pineapple Slice
- 1g X Sea Salt
- 1g X Chilli Flakes
Pre-Stage
- 1 1.
- 2 Defrost the ham hock
- 3 2.
- 4 Cut the pineapple into 8 slices (leave the skin on the pineapple)
- 5 3.
- 6 Mix the honey and chilli flakes NB - Please ensure that this prepared on the
- 7 day of service and thrown out at the end of the day
Method
- 1 1. Place ham hock on a plate, splash of water and clingfilm.
- 2 2. Heat in the microwave for 40 seconds
- 3 3. Place on tray, top with hot honey, bake in the oven, halfway through, baste with
- 4 hot honey from the tray
- 5 4. Deep fry the chips, season with sea salt
- 6 5. Shallow fry the eggs
- 7 6. Grill the pineapple
- 8 7. Garnish with watercress
- 9 8. Serve as shown
