Pan Fried Lamb Rump
Ingredients
- 1 X Lamb Rump
- 1/10 X Cabbage
- 160g X Peka Roasting Potatoes
- 50ml X Beef Dripping Gravy
- 80g X Carrots
- 5ml X Rapeseed Oil
- 1g X Sea Salt
- 1g X Cracked Black Pepper
- Bulk Recipe – Mint Butter 25ptns
- 250g X Butter
- 25g X Mint (chopped)
Pre-Stage
- 1 1. Make the mint butter
- 2 2. Defrost the beef dripping gravy
- 3 3. Wash, peel and blanch the carrots
- 4 4. Wash, chop and blanch the cabbage
Method
- 1 1. Pan fry the lamb rump, seal on both sides, finish in the oven, allow to rest
- 2 2. Slice the potatoes and saute in a pan
- 3 3. Saute the cabbage and carrots
- 4 4. Reheat the beef dripping gravy
- 5 5. Serve as shown
